Brussel Sprout Stir Fry

I have been posting recipes for desserts and sweets recently, so I think it's time for a healthy dish.

Now, don't look at me that way. You knew this had to happen sometime. We can't let our teeth rot, eating sweets all the time.

Ingredient list:

-7-8 brussel sprouts, destemmed and cleaned
-1 medium zucchini squash, thinly sliced
-1 cup sliced mushrooms
-1/2 cup sliced bell peppers
-1/4 cup grated carrot
-2 medium tomatoes, chopped
-2 tblsp soy sauce
-1/4 tsp of red pepper flakes
-1/4 tsp parsley
-1/2 cup of olive oil
-Salt

1) Cut the cleaned brussel sprouts in half. Blanch them in boiling water for 6-7 minutes.  Drain and set aside.

2) Pout olive oil into a pot. Turn the flame on medium heat then add the brussel sprouts and sliced zucchini. Cook for about 5-6 minutes.  Add the soy sauce and red pepper flakes. Stir and continue to cook.

3) Add the mushrooms and bell peppers. Cook for 4 minutes.

4) Finally, add the tomatoes and grated carrot. Toss in some parsley. Cook for another 2 minutes.

5) Serve over brown rice.






Add some salt if needed.

  1. I LOVE brussels sprouts! I also like that this isn't just sprouts though; you've got other awesome veggies in here too. Yum!
