What's up Doc? No, seriously, have you tried this amazing carrot cake? Even the ultimate carrot connoisseur (Bugs Bunny) would be willing to try a piece.
Ingredient list:
Carrot Cake:
-2 cups of all purpose flour
-2 cups of sugar
-2 tsps each of baking powder, baking soda and ground cinnamon
-1 tsp of almond extract
-1 tsp of vanilla extract (you could also omit the almond and just double the vanilla)
-1/2 tsp of salt
-4 eggs
-1.25 cups of canola oil
-3 cups of grated carrot
Cream cheese frosting:
1) Mix together 8 ounces of softened cream cheese and 1/2 cup of butter. Add 2 tsp of vanilla extract. Then gradually add 3-4 cups of powdered sugar, beating it in until you get a slightly thick consistency.
For the cake:
1) Mix the eggs, sugar, oil and extracts in a bowl.
2) Mix the dry ingredients (flour, soda, baking powder, cinnamon, salt) in another bowl. Gradually blend the dry ingredients into the egg mixture. Finally, add the grated carrot and mix until incorporated.
3) Grease and flour a 9x13 pan or baking dish. Pour the batter into the pan and spread out so that it's even.
4) Bake at 350 degrees for 40-45 minutes. It's done when a fork pushed into the center comes out clean.
5) When it cools, frost with the cream cheese frosting.

I love, love, love carrot cake! Which is funny because I hate carrots. I think it's because I grew up with a carrot cake recipe from my great grandmother that is just delicious. Yours has a lot of similar components, which means it must be good too!
