Sweet Potato and Bean Soup

Wanna hear something funny? I keep typing "soap" instead of  "soup". Luckily, I would never eat soap. It's not edible, and besides, it tastes funny.

Trust me, there's no soap in this soup. Try saying that three times fast. :P

-Ingredient list:

-2 cups of dried beans (I used Trader Joe's 17 Bean and Barley mix)
-2 carrots, peeled and chopped
-2 celery stalks, chopped
-6 cups of vegetable broth
-1 medium onion, peeled and diced
-1 tablespoon of minced garlic
-1 tblsp of dried basil
-1 tblsp of dried parsley
-1/2 tsp of dried thyme
-1/4 tsp of dried rosemary
-1 large sweet potato
-1 15 ounce can of diced tomatoes. 
-Olive Oil
-Salt and pepper to taste

1) Soak the beans in water overnight.

2) Pour the beans, the remaining water and 4 cups of broth into a large pot. Let it boil.

3) Pour olive oil into a separate pot. Toss in the carrot, celery, onion, herbs and garlic. Saute until the onion starts to soften.

4) Once it cooks halfway through, add it to the bean pot. Use a knife to slash across the skin of the sweet potato, and place it in the pot, making sure to cover it with liquid. Add the canned tomatoes. Place the lid on top.

4) Cook until the beans and sweet potato soften and cook thoroughly. When the liquid boils down, add the remaining 2 cups of broth.You will have to keep checking it to see if it's cooked. It should take no more than 45 minutes. Stir occasionally.

4) Once the potato is done, peel off all the skin and cut it up into chunks. Mix it into the soup. Add salt and pepper to taste.






This yields a sizable amount. It should feed at least 8 people. And no one will complain it tastes of soap. :)

  1. But soap smells so gooooood! Probably not as good as this soup! I saved the recipe; it sounds delicious.
